Abstract
This study was to investigate the effect of various elicitor on antioxidant compound and activity of germinated brown rice. Brown rice seeds were germinated at 25¡ÆC for 48 hours and sprayed with four followed by analysis of total polyphenol content, 2,2¡Ç-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) and 2,2-diphenyl-1- picrylhydrazyl (DPPH) radical scavenging activity, and reactive oxygen species (ROS) inhibitory effects against oxidative damage in HepG2 cells. Elicitation with indole acetic acid (IAA) in germinated brown rice significantly increased polyphenol accumulation enhanced antioxidant activities. The highest total polyphenol content (26.44¡27.83 mg gallic acid equivalent/g extract), ABTS radical scavenging activity (27.64¡30.30 mg ascorbic acid equivalent (AAE)/g extract), DPPH radical scavenging activity (5.83¡6.87 mg AAE/g extract) observed in germinated brown rice IAA treatment. Also, germinated brown rice most effectively inhibited intracellular ROS level oxidative stress induced HepG2 cell. These findings that elicitation with 0.01% IAA potentially improve the antioxidant properties and health benefits of germinated brown rice.
